Step 1: Dry Roast the Sesame Seeds

Heat a heavy-bottomed pan or kadai on medium heat.

Add the sesame seeds and roast them for 2–3 minutes until they turn light golden and start to pop.

Stir continuously to avoid burning.

Once roasted, transfer them to a plate and let them cool.
Step 2: Prepare the Jaggery Syrup

In the same pan, add 1 tablespoon ghee and ¾ cup jaggery.

Melt the jaggery over low to medium heat, stirring often.

Keep cooking until the jaggery becomes frothy and thick.

To check if it’s ready: Drop a small amount in cold water—if it hardens and breaks like candy, it’s done.
Step 3: Mix the Sesame and Jaggery

Turn off the heat and immediately add the roasted sesame seeds to the hot jaggery syrup.

Mix quickly and thoroughly so that all seeds are coated well.
Step 4: Shape the Chikki

Grease a steel plate, tray, or countertop with a bit of ghee.

Pour the hot sesame-jaggery mixture onto it.

Flatten it quickly using a greased rolling pin or spatula.

While it's still warm, cut into squares or diamonds using a knife.
Step 5: Cool & Store
