🛒 Ingredients
- 1 kg bone-in beef shank or lamb shank (available at your local butcher)
- 2 medium onions, thinly sliced (available at your local grocery store)
- 2 tablespoons Aachi Ginger Garlic Paste
- 1 packet Shan Nihari Curry Masala 60g
- 4 tablespoons Royal Premium Butter Ghee 1.5Kg
- 4 tablespoons Pillsbury Chakki Atta Whole Wheat Flour
- 6–8 cups water
- Salt to taste (e.g., IB Himalaya Salt Fine)
For Garnish:
- Fresh cilantro leaves, chopped (available at your local grocery store)
- Fresh ginger, julienned (available at your local grocery store)
- Lemon wedges (available at your local grocery store)
👩🍳 Instructions
- Sauté Onions: In a large pot, heat the ghee over medium heat. Add the sliced onions and sauté until golden brown. Remove half of the onions and set aside for garnish.
- Cook Meat: Add the Aachi Ginger Garlic Paste to the pot and sauté for 2 minutes. Add the meat pieces and cook until they are browned on all sides.
- Add Spices: Sprinkle the Shan Nihari Curry Masala over the meat. Mix well to coat the meat with the spices.
- Simmer: Pour in water to cover the meat. Bring to a boil, then reduce heat to low, cover, and let it simmer for 3–4 hours, or until the meat is tender and the flavors have melded.
- Prepare Flour Slurry: In a separate bowl, mix the Pillsbury Chakki Atta Whole Wheat Flour with a little water to make a smooth slurry. Gradually add this to the simmering stew, stirring continuously to avoid lumps. Cook for an additional 15–20 minutes until the gravy thickens.
- Adjust Seasoning: Taste and adjust salt as needed, using IB Himalaya Salt Fine.
- Serve: Ladle the Nihari into bowls. Garnish with the reserved fried onions, chopped cilantro, julienned ginger, and lemon wedges. Serve hot with naan or kulcha.
