The queen of spices and the most sought after condiment. Cardamom is made from the seeds of different types of plants in the genera, Elettaria (fresh, green and small) and Amomum subulatum (black/dark brown, dried and bigger than green elaichi). Thus, there are 2 varieties of cardamom. Amomum, well known as badi eliachi and the green cardamom, which is more in demand than badi elaichi, also called Nepal cardamom.

The black pearl of spices Kalonji is also known by the name of Kalojeera, Kalanji, black seeds, black caraway, fennel flower, onion seeds and Nigella.
